Noita Winery’s wines are early wines. They are produced by hand as naturally as possible and without added yeast. The wines are suitable for vegans as well as organic.
The grapes used in the wine come from Austria, where they are hand-picked before being cold-shipped to Fiskars. At Witch Winery, the grapes are still hand sorted, pressed and aged with local wild yeasts for seven months before bottling.
The skins of Doppelgänger red wine grapes are allowed to macerate (extract) twice, to create a concentrated tannin structure.
The nose is earthy, with notes of dark berries, cherry and plum. The medium-full, elegantly tannic taste echoes the aromas of the fragrance.
