The history of the Mir family as grape growers in Catalonia goes back many centuries, the earliest document mentioning their viticulture dates back to September 1474.
In 1979, Josep, now the 17th generation of the family, started making his own wine under his own label, thus helping to start a movement for higher quality and artisan grown wines that reflect the different vineyards and the unique style of the region.
Today, Josep's son Pau is on board and together they continue the quality work.The estates are planted with Xarel-lo, Macabeu, Merlot, Cabernet Sauvignon and Garnatxa Blanca. In 2019, Josep and Pau released for the first time two semi-digested brut natures (Escumós at Castellan, they are not allowed to call their wines Cava due to DO regulations). But their wines are very pure and all totally natural.
Bombolles, meaning Bubbles in Spanish, is a blend of Chardonnay and pinot noir. The wine is harvested manually in 10 kg baskets. Gently pressed and fermented without the addition of yeast in oak barrels. All vintages are vinified separately and normally aged for about 18 months with their lees in oak barrels of which about 20% are new. They are then blended and aged for a further 2 months in tank. Very tasty easy going sparkling wine with lots of fruity sensations. Ideal apéro for the upcoming holidays.
