The base wine was fully fermented using indigenous yeast and then stabilized over winter. Before the start of fermentation some juice was held back and frozen. A week before bottling the frozen juice was thawed and slowly added back to the base wine to relaunch resulting in a juicy “pet nat”. This is Julie’s first cuvee released just to coincide with International Women’s day. In collaboration with Lisanne Van Son, 1€ of each bottle sold will be donated to Solidarite Femmes (www.solidaritefemmes.org) an association that helps women who are victims of violence. Julie and Toby Bainbridge live in the village of Chavagnes les Eaux which is a short drive south from the city of Angers and have been making wines from around 4.5 hectares of vines that he owns around that village. Their wines have certainly made people sit up and take notice. They were included in the sailing of the brigantine "Tres Hombres" when it carried 10 tons of French wine from Brest to Copenhagen under sail for delivery to the world’s most famous restaurant, NOMA. All their wines are bottled in clear Champagne bottles and are capped with crown seals. The clear bottles are used so that you can see the colour of the wine and the crown seals are to eliminate the possibility of cork taint.
