Not even in their thirties, in 2018, Amélie & Alexandre Desanges-Guilin, sommeliers by training, left their wine bar in Clermont Ferrand to set up as winemakers in Vensat to found Domaine Les Ussels and make natural wine in the Auvergne. In a family home, they built their winery, and in addition to the vines, with the intention of creating a polyculture farm, they raised animals (chickens, donkeys, sheep...) and had several plantations.

This wine consists of Grenaches Gris and Blanc macerated in a direct press of Grenache Noir for a week. The Grenaches come from Vincent Lafage / Salicaires Wine in Canet en Roussillon, who works organically. And the vines are around 30 years old on alluvium. Nyiramachabelli is Dian Fossey's Souahélis nickname for "the woman who lives alone in the forest".
